Cranberry Pasta Salad


Ingredients

Rainbow Rotini pasta cooked - 3 cups
Dried Cranberries - 1/4 cup
Shredded Iceberg Lettuce - 1/2 cup
Cucumber - 1/2 cup small cubes

For dressing

Sun dried tomatoes - 1tbs chopped
Garlic - 1 small pod minced
Olive oil - 1 tbs
Balsamic and red vine vinaigrette - 1 tbs
Ranch dressing - 1 tbs
Lemon juice - 2 tsp
Dried Basil - 1/4 tsp
Italian seasoning - 1/4 tsp
Sugar or Honey - 1 tsp
Parmesan cheese - 1/4 cup
Salt and pepper to taste

Prepare pasta according to package directions. Drain, rinse under cold running water and drain again. Prepare dressing by whisking all ingredients together. Take a large bowl and combine pasta, lettuce, cucumber and cranberries. Now pour dressing over the paste to coat and toss. Then refrigerate until chilled and serve chilled.
